▋什麼是生抽


「生抽」是指沒有加焦糖染色調味的醬油，顏色淡，鹹鮮味飽滿。

其中，又分直接從缸中取出第一道醬汁的頭抽，與取過頭抽，再加鹽水煮榨出的二抽三抽。

這瓶「全珍純釀造生抽」是無加水稀釋原汁，屬於生抽頭抽。

▋生抽的用法

生抽適合用來做蒸魚醬汁、淡色滷肉或一般烹飪提鮮用。

做一些用醬油的菜色時，如果不希望顏色太深，或其他因素希望料理有醬香，但又不會含太多糖時，生抽就是很好的選擇。

▋台灣生產的無添加生抽

很多人都會問台灣哪裡有賣生抽？確實有點難找，因為台灣市面上幾乎所有醬油都是加糖調色調味的產品。

不過還是有少數幾家工廠在生產生抽，只是你沒有辦法在一般超市買到而已。這瓶全珍純釀造生抽就是其中之一。

全珍位於南投草屯，是一家傳承三代的低調手工醬廠，沒有過度的華麗文青包裝，以前是只有當地老饕才知道的珍味。

有別於台灣一般醬廠的豆麴或麥麴，全珍使用草屯在地糙米製麴，成品風味清香淡雅，醬香味有層次感。只要點一滴在湯匙上品嚐一下，就能感覺到與一般市售品不同的醬油本味。

全珍純釀造生抽的原料只有黑豆、糙米、水、鹽，沒有其他任何添加物。無糖但又淡淡回甘，樸素的鹹鮮味來自原料本身，真誠實在，連香港都買不到這麼單純的無添加生抽了。
