這款梅干菜是美食家公認，台灣最佳梅干菜產區，苗栗縣公館鄉大坑社區所生產，手工梅干菜。使用產銷履歷芥菜，整顆製作。非細碎包裝的邊角料梅干菜。原料芥菜經過兩次清洗後，才進行製作，所以幾乎不含風沙。風味自然醇香，無化學添加物。

▍ 公館大坑古法手工製作

苗栗縣是有名的客家大縣，其中公館鄉以客家梅干菜、紅棗等著名。公館鄉有三個社區製作酸菜梅干菜類，其中大坑與仁安社區強調傳統手法製作酸菜，每年11月到隔年3月是芥菜的盛產期，產地展開採收，進行製作

▍ 使用產銷履歷芥菜

台灣製作梅干菜的生產者，幾乎沒有人使用產銷履歷芥菜。我們這款梅干菜，是委託職人使用產銷履歷芥菜製作，每一包可以回溯到芥菜的種植者，安心有保障。

▍ 原料經過兩次清洗，幾乎無砂土殘留

一般人做料理的印象，梅干菜雖然好吃，但清洗真的很麻煩，沒洗乾淨，料理好的梅干菜，咬下去會有砂土，影響食慾。

這款梅干菜在製作前，原料芥菜經過兩道清洗手續，最大程度減低砂土殘留，好吃又安心。

▍ 日曬後多次發酵熟成

大坑社區的梅干菜製作方式，講究日曬後再發酵三次以上。

清洗好的芥菜，先用粗鹽揉搓﹐入缸製成客家酸菜。

在田地上鋪上稻稈，再鋪上細網成為乾淨的日曬場。將製好的客家酸菜，鋪在細網上日曬，日落後收回，入缸進行七天的再次發酵，然後再日曬、再發酵。最少要經過三次的日曬與再發酵，直到乾燥為止。

乾燥後的芥菜，還必須入缸，在陰涼處存放熟成至少三個月甚至更久，這樣才能生成梅干菜的醇厚風味。

▍ 每公斤芥菜只能產出100克梅干菜

說起來你可能不相信，古法製作梅干菜，製成重量差不多只有新鮮芥菜的10分之1。也就是每公斤芥菜，只能產出100克梅干菜。

大家要對手工梅干菜多一點敬意啊。
